Crystal noodle with chicken (miến gà)

If rice noodle (bún) is Queen in our cuisine culture, crystal noodle (miến) could be considered as Princess! Crystal noodle or cellophane or glass noodle. These three names mean a special noodle made of either green mung bean or potato starch or cassava. After we cook in boiling water, the noodle becomes transparent ...as crystal!

Miến is a popular dish, especially in the north, but now very easy to find it in many places in Sài gòn, every corner.Crystal noodle, as far as I know never goes with beef or pork (!?), mostly chicken, duck with bamboo shoot, crab or eel.   

And here the crystal noodle! More chewy than the others! 

Miến gà (crystal noodle with chicken) and miến cua (with crab) are most popular and usually served as breakfast, lunch or even dinner! Miến is more chewy than other noodle, it's good with soup or fried, esp. "miến xào cua" (crystal noodle fried with crab) in clay pot, spicy black pepper... one of the favorite dishes in restaurant.

Before serve, noodle is quickly dipped in smaller container with boiling water!

Miến gà in Kỳ Đồng street (14/5 Kỳ Đồng St., dist.3) could be one of the best places to go. Very crowded around lunch and dinner time! I like the taste, soup slightly sweet, chicken is good!  And for better taste we should squeeze some drops of lemon juice, add some chili and steamed bean sprouts! All flavors really well mixed together!

We were in rush so we didn't order anything else here, but an extra plate with cooked chicken would be the best! Will come back!
