Vietnamese ham - speciality from North

How can I translate this into English, is it ham? or is it sausage ? I prefer to call it ham as I feel our traditional chả which made of lean pork or beef, more similar to ham, but we can call it sausage too.
I said chả - speciality from North because in Hà Nội the variety of chả is much richer than in South, and the quality is also different - better!

 What's chả ? This's a special dish made of well-pounded lean pork, potato starch with some other ingredients such as garlic, peppercorn, fish sauce... And it depends on what kind of chả, some other secret ingredients may be added, such as young rice for fried chả cốm (tasty but sticky!) or special spice like aromatic dill to fried beef ham (chả bò) or cinnamon to famous chả quế (cinnamon ham). 

                   Chả bò - fried beef ham with an extra flavor from dill.

But here we are not talking how to prepare a good quality, irresistible chả, it would be a big secret that we may never learn from the makers, esp. in North, when it's a generation-to-generation family business without leaking out to the outsiders.

                 Chả cốm - ham with young rice, tasty but a bit sticky due to young rice (?)

The first street food in my childhood!


I was born in Sài gòn, our family's first house in Phan Đình Phùng street (now Nguyễn Đình Chiểu). I lived there until 7 year old and in that first seven years of life - there were many things that I still remember until today!
My first childhood friend. My first school. My first dog. My first bicycle and of course my first street food! No, there is one more thing I still remember. My street barber - an old man, in his 60s, always in traditional clothes bà ba, in white color, with his ivory color panama hat! He used to cut my hair until my mother bought her first hair clippers for our family!

Not talking about my childhood friend that I didn't meet for over 30 years, not about my sadness when my parents gave my puppy to a French father... but about my feelings when I first tried a traditional glutinous rice cake consisting of two pieces and filled with traditional ham between them! Bánh dầy!
My mother bought it  from a small stall at the corner, opposite my first school - Aurore!

         Bánh dầy made from glutinous rice, simply filled with ham in between. 

That traditional cake, originated from North, it's not a simple cake, it's a symbol of our Heavens (while the other sticky rice cake - bánh chưng symbolizing the Earth), our love for parents...There was a legend telling us how this cake has been created as a special gift to the first Vietnamese King - Vua Hùng, when the King was considering to select among his 22 sons who will succeed him on the throne. The youngest son has been advised by some fairy, he used the glutinous rice to create this cake. Rice for Vietnamese as the air, the water, the spirit of life! So with this cake he won his father's heart and the throne!

Market in Mekong Delta in the eye of a foodie!

As a promise from a previous post "Day trip to Western capital"
I'd love to share not feelings but some captures in this traditional market in Cần Thơ!

My parents house is very close, less than 5' minute walk, to Chợ Bàu Sen - a small market but probably
over 60 year old in Nguyễn Trải street. Right in the center of the busiest fashion street!
I grew up with this market!

I love to go there. Every market wherever I've been!
Bali, Phuket, Taipei...up to Tokyo or even Helsinki, down to Melbourne, Tasmania.
To feel lively atmosphere. To mingle myself with the colorful, smelly picture.
To see how people communicate with each others. Bargain. Shout. Laugh.
To find something new. And to buy a lot of never used stuffs!

Representing speciality in many class restaurants in Sài gòn.


I wish to list down all names here, but the color, the shape blurred together and confused me.
