Sticky rice - sweet taste (xôi ngọt) - Part One

Along with well-known breakfast-dishes as beef noodle, broken rice, bread...sticky rice is considered as one of most affordable breakfasts for many different-income level people in Vietnam. They could be school children, students, white & blue collar workers, housewives...everyone! 
Vietnam is a country with rice and fish sauce culture, that's why dishes made of rice, sticky rice are part of our life, very diversified! We have sweet and savory sticky rice dishes. I would suggest to try some good sweet sticky rice first! My favorite are corn-sticky rice (xôi bắp) in Northern style, pandan leaves sticky rice (xôi lá dứa) with coconut sauce!

Corn sticky rice (xôi bắp)is speciality from the North. It's a mixture between corn and sticky rice, corn should be well-cooked, but not too soft, it's served with green bean, crispy fried shallot, a little bit of oil, sugar...at some place, people localize for Southern taste, they add fresh grated coconut meat (dừa nạo). Talking about this, I remember a woman selling this corn sticky rice near to my house , I bought it from her mother when I was kid,  and now from her, but since early this year I didn't see her old stall anymore at usual corner, maybe family business already finished when many new spots appear nearby, means more competition!   
In the corner of Lê Thánh Tôn and Pasteur streets, every early morning one old Northern-speaking accent lady sitting on the sidewalk with her typically Vietnamese traditional stall (gánh hàng) and sells very good corn-sticky rice wrapped in banana leaves for nearly 50 years! Half century!

Pandan leaves sticky rice (xôi lá dứa) is purely from the South! It's served with coconut sauce (optional),  a bit of salted sesame and sugar, fresh grated coconut meat and special sticky rice paper (bánh tráng nếp) at the bottom!

As many other foods, the recipe for sticky rice varied in provinces, each place is famous for their own speciality, for example "black bean sticky rice with ginger, sesame" (xôi vị) from Central or famous sticky rice with Sweet Gourd (xôi gấc) from the North! Basically sweet sticky rice dish are always either with grated coconut meat, sugar, sesame, or green bean paste, coconut sauce. Sticky rice with peanut (xôi đậu phọng), sticky rice in purple color (xôi lá cẩm - cooked with special leave to get this nice color!) are another popular sweet sticky rice dishes!

As said earlier, sticky rice dish is like our culture, it's not just for breakfast or another meal, but also a dish that as tradition, we need to prepare for our Lunar New Year (Tết). For this special occasion, we have some choices, either sticky rice with sweet gourd, sticky rice with green bean in Northern style (xôi vò)...together with the other dishes we celebrate our New Year in Feb.
