Yellow noodles (Mỳ)

I call yellow noodles, because the color of noodles is simply yellow or egg noodles!
In Vietnamese we just say noodles (mỳ) and we all know this is originated from China! Writing this blog, I remember when I was a kid, every night I hear the sound "coc coc, coc coc" from noodle boy, he walk around in the neighborhood with two wooden sticks, makes that sound, we call him, make order, he goes back to the noodles cart, where the owner in waiting for the orders, prepares noodle and the boy brings it to us! Door-to-door service at very cheap price! Nowadays in some area, you may still hear this unique sound, but it's less and less with time!

Talking about this "yellow" noodles I still remember when we order just noodles, it's always served with thin & crispy deep ried cake with small shrimp on it (now it seems gone!), and my favorite is noodles with won ton (hoành thánh)! I like to eat this noodles at traditional noodle Chinese stall, because I want to see some color drawings of Chinese legendary characters! Nowadays I can find this cart,  but it like brand new, what in my memory is the old wooden noodle cart, smelly of the soup, chili and soya sauce!

These days the selection of noodles is rich: not only noodles with wonton, but with mushroom, with stew duck (mì vịt tiềm), with roasted chicken... Braised duck is a good choice, duck meat is very tender and full-flavored of some Chinese herbals! The soup for this noodle is different from others, darker in color and richer in taste!

My cousin living in Melbourne, she learn how to prepare this noodles with braised duck, instead of complicated procedures to stew the duck, she just buy a roasted duck from Chinese shop and cook it in the pork (or chicken!) stock ... and then add yellow noodles - we have good braised duck noodles!
Amazing taste!

Near to Me Linh Square, there is one very small shop selling noodles, the menu is limit but by somehow always in good business. Another good shop in Võ Văn Tần St. called Tân Tòng Lợi, famous for their bánh xếp (dumpling noodles), another choice is Mì Chú Tắc (Uncle Tac's noodles!)

Any comparison between beef noodles with this "yellow noodles" is quite ridiculous, because they are different, from the taste, the history to the food culture!
If beef noodles are our national pride, yellow noodles could be also our another very-close-to-heart dish for many Vietnamese, but it always remains Chinese!
